A good tip is to use that red lever on the gas inlet.
You can decrease any size flames candles, and tighten it up a bit. You also run less reducing with that gas lever closed a bit.

And you really should get that air hooked up as soon as you can. Even a cheap $70 one from harbour freight will do with a couple of moisture traps.
The Bunsen flame is something I wouldn't be able to work without now and the secondary air makes even troublesome colors cooperate nicely.
